This refreshing, seasonal version of a Tom Collins is a snap to make at home. The original Tom Collins is a true pre-prohibition classic. With one sip of this Mad Cow Collins, we promise that your sanity will be restored!
2 oz estrəgin
1 oz lemon juice
1/2 oz strawberry, rhubarb syrup infused with a touch of coriander and black pepper
To make the syrup, add a cup of strawberries, a cup of rhubarb, 1/2 cup of sugar and 1/2 cup of water to a pan; add a pinch of coriander & black pepper. Bring to a boil and simmer until fruit has broken down. Remove from the heat and allow to cool. Strain through a sieve, pressing down on the solids to get as much syrup as possible. Store in the fridge in a sealed jar.
Shake ingredients with ice and strain into an ice filled tall glass and top with club soda. Garnish with a strawberry or a flower.
